  Zafrani Pulao

Ingredients 

Rice (long Grained/basmati) 2 cups
Almonds 20-30
Cashewnuts 12-16
Ghee 4 tbsps
Saffron a pinch
Nutmeg Powder 1/4 tsp
Green Cardamom Powder ½ tsp (5-10)
Sugar


Method: 

  1. Wash rice twice and soak in just enough water to cover it for half an hour. Drain excess water.
  2. Place almonds and cashewnuts in a flat microwave dish and cook, uncovered on Microwave Low for five minutes. Let them cool and thinly slice the almonds. Halve the cashewnuts.
  3. In a deep casserole, mix ghee and rice and cook, uncovered, on Microwave HIGH for two minutes. Stir. Cook, uncovered on Microwave HIGH for two minutes more.
  4. Mix nutmeg powder, green cardamom powder, saffron, raisins and sugar into the rice.
  5. Add three and a half cups of water and milk and stir once.
  6. Cover and cook on Microwave HIGH for fifteen minutes. Allow standing time for five minutes. Time may vary based on your Microwave.
  7. Garnish with almonds and cashewnuts . Serve hot.
