Punjabi Aam Ka Achaar

Ingredients

2 kg green mangoes
6 tbsps salt
5 tbsps mustard seeds, ground
5 tbsps Kashmiri red chilli powder
2 tbsps turmeric powder
8 cups (2 lt) mustard oil


Method

  1. Wash mangoes and wipe with a kitchen towel.

  2. Cut each mango with the peel into 8 pieces.

  3. Put all ingredients with 5/8 cup (150 ml) oil in a bowl and mix well.

  4. Place cut mangoes in a bowl with 3/4 of the masala mixture and mix thoroughly.

  5. Put remaining masala into a jar with mango pieces over it. Seal well.

  6. On third day heat mustard oil till all smoke evaporates. Cool and pour into the jar. Mango pieces should be covered completely with oil. Cover the jar. It will be ready for use ater 2-3 weeks.
